Review of Japanese Slicing Knife Small Fine Chef Quality NHS1800

Love this knife! 2nd one I've owned. Just do not use it as an ice pick
like my wife did and break off the tip.It does require a some care, but
is well worth it.It stays so sharp!You will hardly use any other knife
in your rack.It fits in your hand great and is nice an light.You do not want it any larger for safety sake.The price is great compared to other name brand $100+ knives. Do not freak when the carbon steel cutting edge discolors, as this is natural.The only thing is that when you wash it off(never diswasher), you must towel dry it right away or that carbon steel will rust.I purchased a $10.00 2" x 3" diamond block sharpener for it that I use maybe once a month to keep it razor sharp.If you are the cook in the household like me, you will use this baby all day long.

The pointed blade of this version is excellent for slicing meats as well as vegetables. 5 1/4" blade, 9 5/8" overall.Comes with use and care instructions.
